Grgich Hills '01 Zin & a Near Vegan like Dinner...
I decided to use what we had left in the refrigerator in a mix match dinner. When I do cook, it's usually of the free flow variety, taking remnants of things in an attempt to make something of value, which I think happens more often than not. So tonight I took a fresh bag of leeks & a large Chilean Eggplant (can an organic Whole Foods shipment of Chilean vegetables be good for the environment?), cooked up two cups of brown rice...
and added cauliflower (sp?), red onion and diced carrots. Using a wok, I sauteed the eggplant, Cauliflower, red onions, leeks and carrots in an Amino Acid (natural soy sauce) type of marinade/oil recommended to me by a clerk at Whole (Paycheck) Foods. When the brown rice finished, I poured half of it into the wok (I made 2x what I needed, so much for knowing how much I need!) and cracked an egg on top of it. I stirred for a couple minutes and served.
I call it a Brown Rice Eggplant Stir Fry. It was good, better than I expected, and that was the consensus opinion (ok, only one other human being agreed but both my canine family members seemed to love it :). Combined with a bottle of 2001 Grgich Hills Zinfandel from Napa Valley it was an outstanding meal.
The Zinfandel is a nice red wine, with a touch of spice uncharacteristic of zinfandel's but a smoothness just as uncommon, make it pleasant with food.
